First I just wanted to add a recipe for burrito's but that doesn't leave much room for others to add their recipes and experiences for the Mexican cuisine. I'm dedicating this thread to one of my favorite cuisines. For now I'll add a recipe for beef&beans burrito's and I'm hoping you guys have some cool recipes as well.
Beef and beans burrito's
- 300gr ground beef
- 1 onion, chopped
- 1 clove of garlic, minced
- 1 jalapeño pepper (can be bought fresh or potted)
- 1 can of diced tomatoes
- 1 can of kidney beans
- 1 tablespoon of chopped oregano (dried or fresh)
- 1/2-1 tablespoon of burrito/taco seasoning
- 1 tablespoon of vinegar
- 6 tortilla's
- salt&pepper
Remove the seeds of the jalapeño if you wish and slice into rings. Put the beef,onion, garlic and pepper into a pan and bake until the beef is done. Add the burrito/taco seasoning, oregano and vinegar. Now stir in the tomatoes and kidney beans and bring to boil. Reduce the stove to medium-low and simmer while covered for about 30 minutes or until the mixture has the right thickness. Add salt and pepper to taste.
In the meantime heat up the tortilla's as described on the packaging. To serve scoop the mixture on a tortilla, I like to add some grated Gouda cheese inside, and roll the burrito. You can either eat the burrito like this or cover them with a light layer of grated cheese and place them in the oven for about 3-4 minutes at 200C (390F).
