Some time ago I started to make muffins and found it has a potential to become addictive.
The basic recipe is easy, you need:
- 270 grams of flour
- 150 grams of sugar
- 2 teaspoons of baking powder
- half a teaspoon of baking soda (This is what's making the dough rise, it needs something sour to make it work.)
- 100 grams of margarine/butter
- 250 ml of buttermilk (This is the sour part, you can also use milk with lemon juice or milk with yogurt)
- 2 eggs
- Vanilla sugar or vanilla essence
First start by melting the margarine or butter. In the meantime put all the dry ingredients in a bowl. Then in a separate bowl mix the buttermilk, eggs and molten margarine or butter together. The reason why the liquids are kept separate at this point is because too much mixing will make the muffins too tough.
At this point fold the liquids and the dry ingredients together. Remember not to mix it too good.
Put the batter in a greased muffin tray or in separate muffin cups. In my experience a greased muffin tray will give the muffins a slightly crusty side which is my tasty in my opinion. Fill the cups or the tray to about one centimeter under the edge to leave room for the muffins to rise. Put the muffins in a pre-heated oven on 190 degrees for about 20-25 minutes.
Use a sate stick or skewer to check whether the muffins are done. Stick it in the center of a muffin, when it comes out almost clean the muffins are done.
This recipe is for a basic mixture. You can add additives to the final batter as well. For example; blueberries, chocolate chips (cover them in flour before you add them to the mixture so the chocolate is contained when it melts), crushed hazelnuts, etc. The varieties are almost endless.
